Les Carmes is the atmospheric medieval quarter at the heart of Toulouse, bordered by the Garonne River on one side and threaded with narrow streets that have barely changed since the Middle Ages. Known as the soul of “La Ville Rose” (The Pink City), the neighborhood takes its color from the distinctive rose-tinted brick that lines its buildings, tiny squares, and hidden courtyards.

The Marché des Carmes is the neighborhood’s beating heart — a recently renovated covered market open six days a week, stocked with fresh Toulouse sausages, regional cheeses, seasonal produce, and artisan breads. Nearby, the Church of Notre Dame de la Dalbade displays a remarkable colored tympanum above its entrance, a fine example of southern French Gothic. The Paul Dupuy Museum, housed in the Renaissance Hôtel Besson, holds an eclectic collection of graphic arts, clocks, and decorative objects.

Les Carmes is best for foodies, nightlife seekers, and travelers who enjoy getting lost in atmospheric lanes. Wine cellars, cocktail bars, and live-music venues pepper every block, making it one of the most animated quarters in Toulouse after dark. By day, café terraces spill onto tiny squares, and the Garonne waterfront offers long walks with views across to the Prairie des Filtres park on the opposite bank.

The Jardin des Plantes, just southeast of the quarter, provides green space with a pond, playground, and shaded paths. The neighborhood is entirely walkable and sits within minutes of the Capitole — Toulouse’s grand central square and metro hub.
